RECIPE: MULTIVITAMIN SOUP

I reach for cabbage soup if I feel a cold coming on or whenever I want to feel nurtured and nourished on a frosty winter's day. While it may look unassuming, this deliciously sweet and mild flavored cabbage soup packs an enormous nutritional punch.  Plus, it's provides body cleansing action that helps you lose weight. 

Get a load of this nutritional line up: Vitamin C, Vitamin K, Folates, Calcium, Potassium, Phosphorous, Manganese, Iron, Magnesium and Fiber (and that's just the cabbage). Add carrots and you've got 203% Vitamin A plus Vitamin B-6. Use my bone broth recipe and you've got more calcium, iron, manganese, and magnesium, as well as collagen, glutamine, glycine, and proline, which provide excellent joint and bone support. Throw in two potatoes and you've got more Vitamin B-6, potassium, magnesium, Vitamin C and iron. Finish with a touch of himalayan pink salt and bam! -- there's upwards of eighty added minerals.

INGREDIENTS:

  • 1 head of organic green cabbage sliced or quartered
  • 2-3 large organic carrots cut into chunks
  • 2 large organic potatoes, peeled then halved crosswise.
  • 1 organic onion 
  • 2 tablespoons cold-pressed Olive oil
  • Bone Broth Recipe
  • Himalayan Pink Salt for seasoning

DIRECTIONS

In 10 quart pot, sauté onion in olive oil, on a low flame until it's translucent and sweet. Add cabbage, carrots, broth and potatoes. Allow to boil then lower the flame. Cook until cabbage is translucent and potatoes are fork tender. Season and serve!
