Everyone deserves a little treat on St. Valentine's Day, especially a healthful treat.
What if I told you, you could have multi-mineral Valentines Day? You can! Thanks to my easy to prepare, organic, chocolate almond butter cups recipe. These organic almond butter cups are so simple and easily prepared you'll want to triple the recipe and share!
While these organic almond butter cups have only two ingredients, they bear the load of up to nine essential minerals and protein! If that's not love, I don't know what is! You will need:
- 1/2 cup Organic no-stir Almond butter
- 2-3 bars Trader Joe's Organic Chocolate 73%
- 12 - 15 mini paper baking cups
Arrange the mini paper cups on a small baking sheet. To melt the chocolate, create a double boiler using two pots, (the larger comfortable sitting on top of the smaller.) Fill the lower pot half-way with water. Place the larger pot on top and heat with a moderate to low flame, allowing the water to boil gently. Once the water has boiled, lower the flame to a simmer, then break the chocolate into squares and slowly melt it in the top pot.
Once the chocolate is melted, pour a 1/2 teaspoon of chocolate into each cup. Put the tray in a freezer allowing the lower layer of chocolate to quickly harden. Once hardened, add one layer of almond butter (about 1/2 teaspoon) on each cup, then top with the remaining chocolate.
Refrigerate the almond butter cups for 30 minutes or until set. Then enjoy!
